Thai Mussels with Grilled Sai Aou Lao Sausage, Asian Slaw and Sticky Rice

I wasn’t able to find the Dồi Xá Chiên Tây Hồ sausage – and Olympic Provisions no longer makes the Pok Pok Sai Ua sausage – so I had to try a new brand.

Boudin-Stuffed Chicken Breasts with Sautéed Spinach

Back when I went to Laurelhurst Market to get the Country Pâté and Chicken Liver Mousse for our New Year’s Eve Smörgåsbord, they had some boudin in their meat case. So, I bought some. But then I had to figure out what to do with it. I found this recipe, and decided to give it a shot. I served it with Sautéed Spinach with Roasted Garlic, which I haven’t made in forever.

Corned Pork, Hoppin’ John, Bourbon Glazed Cabbage

Our annual New Years Day feast. The wish I made last year for a new range (as well as a new house) did come true.

Regrettably, Tails & Trotters closed during the last year. This corned brisket was the last one they sold. I guess I’m going to have to figure out how to cure one myself…

I went with a bottle 2008 bottle of Fred from the Wood and a 2014 bottle of Adam from the Wood – both from Hair of the Dog – which also shuttered this past year.

I went with a bottle of Fierce Turtle from The Ale Apothecary. And for dessert… A 2020 Bourbon County Brand Special #4 Stout – an oatmeal stout aged in bourbon barrels with Intelligentsia coffee beans and Bissell Maple Farm maple syrup – from Goose Island.
