Chinese Five Spice Bavette Steak with Baby Bok Choy with Sesame-Maple Sauce

This recipe originally calls for skirt steak, but even when things are normal skirt isn’t easy to find. So, I went with my usual standby: the bavette. I decided to fix the baby bok choy recipe since I hadn’t fixed it in ages.

Cochinita Pibil, Cheese Enchiladas and Elotes

Instead of the usual Korean Pulled Pork sandwiches and Thai Grilled Corn for our annual Memorial Day Weekend / my birthday weekend, I decided to go South of the Border. The Cochinita Pibil is a recipe that I’ve been wanting to try out for a while. The Cheese Enchiladas I usually make for my sister-in-law’s birthday, but we haven’t made them the last two years. And there had to be grilled corn, so I made Elotes.

Grilled Harissa Sesame Beer Chicken with Lemon Cilantro Tahini and Swiss Chard with Fried Olives, Capers and Garlic

I’ve been wanting to try this recipe from The Beeroness for a while now. The only thing I could think of to go with this was the Swiss Chard with Fried Olives, Capers and Garlic – especially since I had some garlic cured green olives left over from last week.

Grilled Stuffed Pork Tenderloin, Sautéed Spinach with Roasted Garlic, Rice Casserole with Maitake Mushrooms

I found this recipe from Jose Garces and figured I would give it a shot. The only thing I could come up with to serve with it was sautéed spinach. The rice casserole was a last minute addition because I found some Maitake mushrooms while I was out shopping.
