¡El Grande Fiesta Royale!

It’s been awhile since we last did this… Time for my sister-in-law’s birthday party: We put on a big spread. I bought some Chicharrón, Taqueria Mix Pickles, Salsa Verde, Guacamole and Tortilla Clips. I made Elotes, Cheese Enchiladas, Beer-Marinated Flank Steak. For desert, my wife made Flan.

I decided to go with a bottle of Cerveza Negra from Xicha Brewing.

There’s a foot of snow out there. Good thing I had all of the ingredients to make this – using the leftover corned pork from New Year’s Day. I did make one deviation on the  Russian Dressing, Instead of using sweet relish I used half diced dill pickle and half capers.

I made this again, but tried a different sauce this time – which with even double the sour cream, was way too thin. Back to the drawing board…
